Chocolate Peppermint Bread

I have a guilty secret that I can’t withhold any longer. When I served dessert tonight….I didn’t make it from scratch. In fact, I used a pre-packaged cake mix. Usually I would snub my nose at this and say “I can make that”, but in this case the end result was so moist, delicious, and chocolatey; I have a feeling I will be using this mix again.

I would never tell you to go out and buy a product unless I truly believed in it…and in this case I’m telling you to grab your keys and your purse and book it to the car! As I have mentioned before I am a big fan of my local Trader Joe’s store. Fan may be putting it mildly…I am in there at least once a week. And they shine even brighter in my eyes around the holidays because they get just as excited as the rest of us in regards to all the pumpkin and peppermint hysteria. One of my favorites are the peppermint Joe-Joes (similar to an Oreo but with peppermint creme filling). But this time they have out-done themselves!

As I was strolling down the aisle trying to avoid getting my ankles clipped by the miniature carts that children plow through the aisles with, this beautiful packaging caught my eye. I know it may be a little early to jump on the peppermint bandwagon, I mean I am still cooking pumpkin puree regularly for breads and muffins, but I thought a change of pace would be nice. And isn’t the point of the end caps to pull at your impulse purchase side anyway? Well played Trader Joe’s….well played.

With nothing more than a small bowl, two eggs, a little water, and oil you are well on your way to a luscious dessert or afternoon snack! The package contains a small pouch of chocolate chunk delicousness (we all know I am a self proclaimed chocoholic). In a little less than an hour your house will smell so inviting, and you can give yourself a pat on the pack for your “semi-homemade” treat. I busied myself with cleaning and laundry so I wouldn’t peek in the oven every 5 minutes, perhaps you have more self control.

This mix is cooked in a bread pan, but honestly, is more like a cake. I may use a 8×8 dish next time. Also an embellishment of white chocolate mixed with a drop or two of peppermint extract might be nice. The flavor reminds me very much of Thin Mint cookies. I will be stocking up on these mixes for all the holiday gatherings that are coming up; a very easy and ooey-gooey chocolately concoction. Happy holidays, and enjoy!
