Today feels like fall. And not one of those wonderful fall days with beautiful leaves, sunshine, and outdoor activities. Today is a damp, rainy, freezing fall day; but I am not complaining! It is a perfect day to huddle inside with a cup of coffee and focus on cooking and baking things to warm me from the inside out. (Might I also add that we had sod installed a few days ago, and the rain is perfectly timed to prevent dragging the hose and sprinkler all around the yard.)

I can’t think of anything as quintessential as pumpkin bread during the fall. The beautiful orange hue could only be made more perfect by the addition of chocolate chunks. Usually I am partial to chocolate chips, but these larger pieces of chocolate are beautiful in this quick bread; great for a sweet tooth. I also add pumpkin pie spice to almost everything that uses pumpkin puree; it is not just for pies anymore! Enjoy this bread for breakfast, a snack, or dessert…just don’t forget to serve it with coffee.
- 1 stick (8 tbsp) butter, melted
- 1/2 c. sugar
- 1 c. pumpkin puree
- 1 egg
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 c. white whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/3 c. semi-sweet chocolate chunks
Preheat oven to 350 degrees F.
Whisk butter, sugar, pumpkin puree, and egg together until well blended. Add pumpkin pie spice and vanilla extract; mix well. Next, add white whole wheat flour, baking soda, and baking powder; fold dry ingredients in with a spatula until just combined.
Stir in chocolate chunks and spoon into a non-stick loaf pan. I love this fall-inspired loaf pan from Williams-Sonoma that has vines and pumpkins on it; I just think its beautiful. Bake in the pre-heated oven for 40 minutes until a knife comes out clean.
Turn out onto a plate and slice to serve. The texture of this bread is moist and light; you will never believe you are getting the added nutrients and fiber of whole wheat flour…it is simply delicious! Definitely serve with friends and family and enjoy!
