Chocolate and Peanut butter Chip Cookie Bars

Okay, I realize this is quite the name for a little cookie bar. But every single ingredient deserves to be represented…and, trust me, the results completely live up to the hype. During my weekly grocery trip to Trader Joe’s I came across something sinful. I was innocently nearing the end of the aisle when I spotted them (for the first time ever, I might add)…peanut butter chips. It took me approximately 0.17 seconds to add a bag to my cart. It has since taken exactly 24 hours to decide what to do with them.

This may sound odd, but I tend to navigate the grocery store in the same order every single week; I find this reduces the chance of forgetting an item. Plus, I am admittedly a creature of habit and routine. Just to keep me on my toes, and perhaps to be a little naughty, occasionally the staff rearrange the aisles…oh boy. I suppose I can’t really complain about the shifting lately; it was necessary to politely make room for all of the pumpkin flavored things that I love. Next up, all the peppermint flavored things that I love. And something I didn’t know I would love; these luscious peanut butter chips.

These cookie bars remind me of the culinary love child between a chocolate chip cookie and a peanut butter cup. I barely adapted the infamous Nestle Toll House recipe; has there ever been a more perfect cookie recipe? I remember watching a food show on television that said the chocolate chip cookie was an accidental invention; thank goodness for culinary accidents. My life would not be the same.


  • 2 sticks of unsalted butter (1 c.), softened
  • 3/4 c. granulated sugar
  • 3/4 c. packed brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/4 c. all purpose flour
  • 1 tsp baking soda
  • pinch salt
  • 3/4 c. semi-sweet chocolate chips
  • 1/2 c. peanut butter chips

Preheat oven to 350 degrees F.


Place butter into a large mixing bowl. If your butter is not softened put the bowl in the microwave for 30-45 seconds to soften it. Sometimes I get a strong cookie craving out of nowhere and I don’t have pre-softened butter…so I have to cheat. The cookies will not suffer; they are still delicious. Add granulated sugar and brown sugar.


Using a hand mixer beat the butter and sugars on low speed until light and fluffy. Next, add two eggs and vanilla extract; mix well.


Add the flour, baking soda, and a pinch of salt. I am not a big fan of adding salt to sweet dishes, you might notice I usually leave it out, but I want to amplify the sweet/salty vibe from the mixture of chips, so I feel it is appropriate here. Mix on low speed until the dry ingredients are JUST combined.


Add the chocolate chips and peanut butter chips; use a rubber spatula to fold them in.


Prepare the 9 x 13 baking dish by spraying lightly with non-stick spray.


Spoon the cookie batter into the pan and smooth out with a spatula so they bake evenly.


Place in oven and bake for approximately 25 minutes until the top is golden brown and the middle does not jiggle when you shake the pan. Remove from the oven and let cool completely before cutting into squares.
